I've been making tutorials for a few years and like to use Screenflow it has the most features and is relatively inexpensive at $100.

I've used scratch a lot and I love. Last winter/spring I ran an afterschool scratch club and this summer I'm teaching a pair summer camps.
3rd graders could do stuff like this (Hopefully it works)

The wiimote works great for this in presenter mode, I use it all the time.
