Forgive me if this question has been answered elsewhere in the forum, I can't seem to find the info
anywhere. My university is being loaned 150 itouch's for a conference
event and we'd like to download some free apps to give colleagues across
faculties a good sense for the possibilities.

We've run a successful pilot end of last year with 50 touch's, but couldn't find a
way to download apps to more than 5, so instead we created a disk image
with a number of key web aliases on the home screens. We did this
manually and it only took minutes to do each one.

There are so many cool apps however, it would be a pity not to give folks an
opportunity to experience them. Can anyone advice a method for doing
this?

I would try setting up 5-10 touches just the way you want. Sync the touches to a or multiple computers. Once you've synced to iTunes start plugging in all the other touches and sync them to the computers. You may still have to rename each touch manually.
