As an I.T. Manager, I have a pretty good idea of how to lock up a windows PC so that our students don't accidently (or maliciously) destroy it's configuration and so that they don't get into the "wrong applications".

We have purchased a couple of class sets of Apple Itouch systems, and I must admit I am a real newbie. Are there any hints on how we might institute controls over what the students might do on these devices?
