Final Project with publisher!

I had my students do a survey..similar to the Google Chrome survey youtube video in New York..".asking people if they knew what a browser was".  After a lesson, I had my students collect similar data..about a question they were interested in asking their friends, family and teachers..the data is amazing but now I'm stuck what do I do with this data...I want them to learn how to use publisher..because it's a program we have purchased and they should know how to use it.  Do you have any ideas what I could do this project and teach them publisher..I was thinking of a lab report ... not sure any help.  I should be asking on Classroom 2.0 huh!

Any suggestions would be great!
