How about the site Eduteka, a teacher portal in Spanish from Cali, Columbia? www.eduteka.org
There's lots of content in Spanish, and a community of about 35,000 teachers in Latin America.
On the right side, you will see a tab, "Aulas en español," that will allow you to connect with Spanish-speaking classrooms that want to have a match through ePals. You can do a collaborative project with a class in a Spanish-speaking country, or your students can ask questions of students elsewhere, extending the vocabulary and concepts in your curriculum. They can use email, podcasts, video, etc. Your students could make a video introducing themselves and the school, or any number of ways to practice Spanish with native speakers.
You have to "join" the ePals Global Community, which has always been free. If you need safe and powerful student email (no embedded ads) you can also get that, called ePals SchoolMail. It's also free. Your students can write in Spanish and you can get a copy of the email for an alternative assessment.
If your students wanted to make a video story in Spanish, they could submit that to ePals to post for other students to view. See the "Storytelling" section of "Focus Areas" here.

I don't teach AP but we use Audacity for audio submissions in my online Spanish classes. It can be a bit tricky--it is easier for them to export as .mp3 files to a server. It allows up to 5 minutes of speaking. You can also use ITunes or Media Player as well. Media Player may be a quicker option if school computers have Word on them already. You may be able to do some sort of google doc or other application if you wanted them to submit them from home. You could all get gmail accounts to have access to this. Hope this helps you!
