I am looking for something online for creating a web glossary. I am hoping to find something similar to the moodle glossary, but can't find anything. We want to create our own vocabulary list and have students add the definitions, then use as an assessment study guide. Any ideas?

Why don't you use Moodle? A Wiki could work.

Here are some examples of what my classes have done. They are completely student driven. I don't know enough about moodle, but am in the process of learning.
