Quia is a good one... You could use voicethread too since the kids could record their voices rather than write so much...

Check out www.eduteka.org, which is all in Spanish and created in South America. They have collaborative projects and more. Much of the content is way above Kindergarten level of course....but maybe it will help with some ideas, or provide some teachers to collaborate with. Students in Latin America could contribute some voicethreads for your students to listen to, and vice versa.

Also look for e-books that are in Spanish, for example Tumblebooks. www.tumblebooks.com
In Miami, the public library has a license, so with a library card, you can get these at no cost.
You could display these digital books on the SMARTboard and they also have an option to have the story read to you, so students could use on the Macs with headphones. I think these are such fun stories!

Also check out the International Children's Digital Library for books originally in Spanish. There is no option to hear the book, but again you can easily display them on your SMARTboard and use with the whole class for a "read aloud." http://en.childrenslibrary.org/ Currently they have 143 books in Spanish! You could also use the "picturebooks" from another language--say Russian--and ask the students to tell a story to go with the pictures.

If you wanted the class to create and share a digital story, you can post it on ePals and share with children of the world. See http://www.epals.com/projects/info.aspx?divid=storytelling_home It could be a story about your school, or they could retell a folktale.

Update on International Children's Digital Library.
Today they have 163 books in Spanish. (Twenty have been added since Jan. 20.) They are always adding new books, which they either scan from a print copy, or get a digital copy from the publisher. All the books are either in the public domain OR the copyright holder has granted permission to put them online for this project.

They also have some "collections" by topic, such as "Seasons of Change," which gathers all the books about the seasons of the year. In this collection, about half of the books are in Spanish. You could show the pictures in some of the other books (in Persian, English, etc.) and use the pictures for whole class discussion. Or students could make up their own stories, using the pictures, and practice words for "spring" and "leaf" and "flower," etc. that might be the vocabulary of the seasons.

Tumblebooks offers a 30-day trial.
Some of the books have quizzes and various interactivities.
