We're interested in trying out a model where some of our high school (14-18 yo) language learners get paired up with individuals who are native speakers in the language that our students are learning (french, spanish, mandarin).

These skype pals would then have video conferences and chats periodically...the video/audio conferences would take place in both english and the language that our students are learning.

Anyone interested in trying something like this out??

I think this is a wonderful idea. My students video skype a few times a month with an English class in Russia to help the Russians practice their English and we get to learn about Russian culture. I am not a language teacher, but can suggest some sites for finding partners:
