There are lots of resources out there for Mentors. I would look at the Resources put out by the Just Ask Group (http://www.justaskpublications.com/), the Cognitive Coaching program (Costa & Garmston) http://www.cognitivecoaching.com/overview.htm and the work of Dr. Laura Lipton- author of Mentoring matters. I can also share with you the outline of the training that we do for our mentors here in upstate NY.
